Olive oil types and applications for use
Our Aterna Organic and Cold Pressed Olive Oils have different characteristics that are evident in their taste, texture, and aroma. Different variations have distinct properties that work bestwith certain meals or food supplements. The first important difference is that our two separate gardens are harvested,crushed, and stored separately. Both products are kept in different chrome tanks. This allows us to have two “Single Estate” product lines.
There are many factors that are responsible for the subtle differences in aroma and taste. Altitude, slope, proximity to the sea, wind, and weather conditions of the gardens all contribute to these differences – and the variations are evident in the olive oils we produce.
Conditions and characteristics vary slightly each year. So, we maintain quality by keeping our processed olives in chrome tanks, away from sunlight and heat. We also process each variety separately, according to the age of the trees and the maturity of the olives.
